Mason Jar Meals: Easy, Fresh, Delicious

One of my New Year's resolutions was to make more time for meals I enjoy. I'm not looking to lose weight, or change my lifestyle, or be skinny--what I want is more time with food. I want to make time to shop for, plan, and prepare meals I like, and to set aside time from every day to eat. Last fall, I realized I didn't feel good about meals anymore. With my busy schedule, which includes a ton of working from home, and my constant travel, I was treating eating like something to check off a to-do list, instead of a vital privilege to be savored. And so, to support my desire to relish in breakfast, lunch, and dinner, I've been collecting tons of recipes. Kids: Fontana, Shea (auth.) and Yancey Labat (illus.) DC Super Hero Girls. DC Comics, 2016. 2 volumes, ongoing. It can be so easy to create a New Years Resolution and so difficult to keep it! In my experience, the most effective ones are promises that I want to keep--things that will benefit my heart, mind, and soul. Simply saying "go to the gym" or "save money" isn't truly getting to the root of what a resolution is, and easily dismissed resolutions can be a source of lingering guilt. Instead of deciding on any old positive-sounding habit, why not take some time to think about a meaningful promise you can make to yourself?
